Broccoli Stem Fritters Recipe

Here’s how to avoid wasting your broccoli steams and get a delicious snack out of them:
- Save your stems as you may broccoli. You can keep them in the crisper (the veggie drawer in your fridge) for a long time before they go bad. I usually save up 5-7 stems and then make a BIG batch of fritters. You can also make these with just one stem. 
- Chop your stems into small pieces and blend them in a blender. 
- Mix blended stems in a mixing bowl with eggs, almond flour, onion, salt, pepper, and garlic powder (or fresh garlic). - The amount of egg and almond flour you use will depend on how much broccoli stem you have. Start slow and add more as you test the consistency. - Here’s my typical (estimate) recipe: - 6 broccoli stems - 4 eggs - 1.5 cups of almond flour - salt, pepper, garlic (sometimes a dash of cumin) I don’t measure my spices. 
- Next, melt some coconut oil in a skillet over ~medium heat and scoop three blobs of your mixture into the pan (depending on your pan size you might be able to make more at once). - Smaller is better when you’re starting out. The bigger the fritter the harder to flip and you’ll end up hating the process, haha! 
- Pat the blobs down with your spatula into pancake looking shapes and let them cook for about 5 minutes. Trust me, let them cook longer than you think you should or they’ll be a total mess when trying to flip them. 
- After five minutes, I use two spatulas - a soft flexible spatula to wiggle underneath of the fritter and a firm spatula to help guide it from the side. One by one I flip the fritters and let them cook for a few more minutes. *It takes some practice to get YOUR technique down. Experiment and know that you’ll “lose” a few fritters in the process ;) 
- Re-oil your pan and go again until you’ve cooked all of your fritters. Be patient and keep trying. It’s so worth it once you find a technique that works for you. 
- Eat them as a side dish, with hummus or hot sauce, or use them as a sandwich bun. The options are limitless :)
